  • Our 250-gallon Primitive Pits offset smoker is built for serious barbecue. Handcrafted in the USA, it runs on traditional wood fire for that authentic low-and-slow flavor. Mounted on a trailer for easy transport, this pit is designed to feed a crowd—perfect for parties, weddings, or corporate events. Whether you’re cooking brisket, ribs, pork, or chicken, the 250G delivers consistent heat, smooth airflow, and professional-grade results every time.

  • The 250G Primitive Pits offset smoker gives you plenty of cooking space without being overwhelming. With multiple racks and steady airflow, you can comfortably cook:

    • 8–10 briskets (full packers, ~12–16 lbs each)

    • 12–16 pork butts (~8–10 lbs each)

    • 18–20 racks of spare ribs (or up to 25 baby backs)

    • 15–18 whole chickens

    • 4–5 full-size hotel pans of sides or smaller cuts

    Note: each recommendation below is the max capacity for each listing. Ex. You can only fit 8-10 briskets comfortably, but not much else at the same time.

  • Typical Cooking Times

    • Brisket: 10–14 hours (depending on size)

    • Pork Butt / Shoulder: 8–12 hours

    • Spare Ribs: 4–6 hours

    • Baby Back Ribs: 4–5 hours

    • Chicken Thighs/Leg Quarters: 1.5–2 hours

    • Whole Chicken: 3–4 hours

    • Turkey (12–14 lbs): 6–8 hours

    All times are estimates—true barbecue is done when it’s tender, not by the clock. Your cooking temps and how you run the stack will change how this pit cooks!

  • Our 250G Primitive Pits offset runs best on 14–16" wood splits with a moisture content of 10–14%. For the cleanest burn and best flavor, we recommend Oak and Cherry (our personal favorites), though Hickory and Pecan also work great.

    For a standard brisket cook, you can expect to burn through 20–40 splits, depending on weather, meat load, and how you tend the fire. Wood mileage may vary, just like fuel in a truck.
